LEFTOVERS...Darn good stuff!!! Well...I had a salami sandwich with garlic/chive cream cheese for lunch today! And, tomorrow...guess what? Im fixing a huge batch of seafood lasagna! OOOHHH, love that stuff! Well, this is one of the things you can do with left over shrimp and cheese! I may also make some paella too! Both favorites of mine and freeze exceptionally well!!! We just finished our 3rd Annual Photo Show/Exhibit, which was held at the Pres. Benjamin Harrison home. As it turned out, it was on Halloween due to that event being moved due to all the heavy rain on Halloween. Attendance was lower than expected and I ended up with lots of leftovers. BUT, not to be thrown away, but to be put to good use! So...tomorrow, I cook most of the day, making a couple of my all-time favorites! Arent leftovers fun???!!! Ill be eating good for the next several weeks!!! Think Ill spring open one of those bottle of wines I had planned to have for the event Friday, but couldnt because I didnt have liquor license... Light a few candles, and reflect on this past years events with the club...as I savor over my Sunday dishes... YUMMMMM!!!
