Lets talk about Swiss Chard. Swiss Chard is well-suited to our region. Grows abundantly, looks beautiful and is great food. Here is a recipe called Swiss Chard Provencal - I call is Crustless Quiche. Recipe: 4 cups of chard, chopped and lightly steamed; 2 cups of grated zucchini (can be substituted for a different vegetable or left out); 1 medium onion, chopped fine; 2 cloves minced garlic; 2 cups of cooked rice; 4oz Gruyere or Swiss cheese; 2 eggs beaten and your favourite herb mix. Blend together and pour into two buttered pie plates. More cheese on top if you wish. Place in medium oven for 50-60 minutes.
