Maggie’s Crust-less Quiche My Aunt Maggie has a flair for food – and I like I’ve always said, we are a family full of foodies! My mom, sister and I stayed the weekend with my Aunt and Uncle and were wowed by this delicious quiche she made Sunday morning. Ingredients ½ large yellow onion, diced 6 cups of fresh spinach 1 cup fresh asparagus, 1” long pieces 2 tbsp butter 6 large eggs, lightly beaten 1 cup heavy cream, heated ½ tsp freshly ground black pepper 2 cups grated low-sodium Swiss cheese Heat oven to 350 degrees Fahrenheit. In a medium skillet over medium heat, melt butter. Add onions and cook until lightly caramelized. Add asparagus to onions, cook until tender. Remove from heat. In a separate pan, sauté spinach in skillet with a small amount of butter until wilted. Set aside. In a medium bowl, whisk eggs with pepper. Stir in cream. Grease you pie plate with butter. Sprinkle 1 cup of cheese on the bottom of the deep-dish pie plate. Distribute the asparagus/onion mixture, spinach and cheese evenly over the cheese. Pour egg mixture over the ingredients and sprinkle remaining cheese on top. Bake for 45 minutes or until set in the middle. Serve with a side of fresh strawberries garnished with a fresh sprig of mint. From my Aunt Maggie’s Kitchen to Yours – Enjoy~
