Medicinal Mushrooms - Enoki, both cultivated and wild - Flammulina velutipes complex.....One of the few known orally active tumor-inhibiting mushrooms.....The cultivated bagged enokis leave much to be desired in terms of taste and texture, but Nagano, Japan, a center of enoki cultivation (and consumption), is said to have a healthier population than found elsewhere in Japan. The wild enoki - found from late fall to early spring in the eastern U.S. (summer in the Rockies) - has a somewhat slimy cap, and the velvety stems can be discarded - but the cooked caps have a pleasant flavor and make a nice stir-fry or pasta sauce.....
