My sweet potato journey this year. Bought about six organic sweet potatoes from local stores in early February. Beauregard, Garnet, and no name purple. First photo is 2/15, with roots just beginning to form. 3/2, taking slips from mama plant with roots attached and putting them in water. 3/18 planted the rooted slips in trays in greenhouse. 4/19 planted into planting boxes and put in screened in porch for easy covering during cold nights. Planted in ground after ground warmed. Since deer like to eat the foliage, I planted them in almost every bed I garden. 8/5 the foliage is all over the place and the deer practically decimated the plants in the back yard. No harm done, the tubers were already growing underneath. 10/14 dug up most of the harvest. They will cure and then get stored for the fall/winter. Sweet potato pie and sweet potato ravioli just two of the goodies made from these babies.
