My zucchini cake I got those zucchinis from a friends garden and didnt know what to do with... She suggested I do them with some tomato sauce cheese and herbs. I decided to go more sophisticated (for once!) and it worked :) First step: Get 1.5 kgs big zucchinis sliced lengthwise and grilled in a pan with a tiny amount of olive oil till they get soft to be able to shape them in the mould. Second step. For the sauce you need: 500 grms chopped ripe tomato 1 small onion chopped 3 garlic cloves crushed 1 tea spoon dried thym 1 table spoon oregano 2 table spoons balsamic vinegar Salt Pepper Olive oil Pour a drizzle of olive oil in the pan and bring to heat. Splash the onions and and garlic till transparent (10 mns max) add the tomatoes cook for 15 mns (even if not very well cooked they will eventually cook in the oven) then add the balsamic and according to ur taste add the herbs the salt and the pepper. Dont forget we will be adding olives, Parmesan and feta later which are salty. Third step. In a non-stick baking mould start by a first layer of zucchini then add some sauce then some Parmesan, feta and olives... Repeat steps till filled. Cover with another layer of zucchini sprinkle some Parmesan and bake for 30 mns at 170 degrees celcius. Remove from oven. Let it chill and place in the fridge for an overnight. The next day remove it from fridge de-mould it and slice it while cold. Allow it 30 mns to get to room temperature and serve. A perfect summery entree to be enjoyed at lunch or dinner. Ideally I would replace the thym and oregano with fresh basil. But didnt have any. So why dont u try it :)
