OFFAL - my first experiment After reading and downloading many articles about the nutritional value of offal, I decided it was time to make it a part of my food habits AGAIN. Again, because my biologist mother brought me up eating bovine liver, kidney, brain, stomach, tongue, heart, lungs and knees. We also eat (and I ate since early childhood) chicken heart and stomach, fish eggs and a bunch of animals that some of you may find disgusting, such as alligator, snake, rabbit, etc. No, we never had the regional offal delicacies from Brazil - my mom doesnt cook Brazilian: she thinks there is too much macro-nutritional redundancy (rice, beans and potatoes, for example, are a nutritional heresy for her). Bellow is a picture of my first experiment with this new approach. It is made of bovine knees, liver and tongue and cooked with onions, parsley, chives, garlic, green peppers and red peppers. You think this is gross? Thats because your mom didnt properly educate you in nutritional terms.
