Red Diamond Food Show- BJCC Space filling FAST- Deadline for applications April 4,2014 See details below RED DIAMOND FOOD SERVICE APRIL 9, 2014 FOOD SHOW CULINARY COMPETITION Culinary Students Foodshow Mystery Basket & Forage Cooking Challenge This competition will be held in conjunction with and sponsored by Red Diamond Food Service at their annual food show on Wednesday April 9, 2014, Birmingham Jefferson Civic Center, Birmingham, AL American Culinary Federation, Birmingham Alabama Chapter Format: Mystery Basket -- protein, starch and a surprise item. Time Limit: One hour to preview show, 15 minutes to forage, 60 minutes to cook Participants: !st and 2nd year Culinary Students Single or two person teams allowed. Times: Three flights of 4 cooks each. Starting times: 9AM, 11:00 AM & 1:00 PM Prizes: $800.00 1st place: $400.00 2nd place: $200.00 3rd place for each flight. Prize money per entry not per person if using a team Judging: 40 points -- taste, flavor, temperature & presentation 25 points -- use of mystery basket ingredients 15 points -- sanitation, kitchen skills & exit cleanup 20 points -- creativity Details: Flights of 4 competitors will be held at 9:00 AM , 11:00 AM and 1:00 PM for a total of 12 entries. Competitors will be allowed one hour to preview just prior to their starting time. Once the mystery basket is presented you will have 15 minutes to forage the show for the remaining items desired to complete your plate. Each competitor will have 60 minutes to cook and serve 2 entrée plates with appropriate garniture. Common basic pantry items will be available on a table adjacent to the kitchen including: flour, sugar, oil, spices, cornmeal, etc. This is a blind tasting so dinner plates will be provided. Competitors will be cooking on residential electric ranges with 4 cooking spots and oven. Sauté pans and sauce pans will be provided, but each competitor will provide all other desired utensils and tools. Electric outlets will be available for small appliances such as hand blenders, mixers, etc. These appliances must be provided by oneself. No food other than what is obtained at the show may be used in this competition. Competition slots are subject to availability. Email your application as soon as possible.
