Rules for buying and cooking shrimp. 1. Wild, not farmed. Shrimping is damn hard work and you can taste the difference. Reward those who man the boats and yourself and spend the extra dollar a pound. 2. Buy and cook, like everything which comes from the sea, with the heads on. You dont have to suck the head (youre missing out if you dont) but cook em with heads on. 3. The goal isnt to cook them, its to heat them through. (Paul Prudhomme via my dad). Corollary: If your shrimps nose is touching his toes you done cooked them too long. That is all.
