Sharing this soup recipe as it was shared with me, which Im currently making (perfect for our snow day in Quebec, Canada). Tastes really good - so I invite you to try it. a great soup can chase away the winter blues one delicious spoonful at a time. Try this Chicken, Jalapeño and Rice Soup and pray for a snow day! Ingredients • 4 cups water • 2 cups of chicken breast from a rotisserie chicken • 3 garlic cloves, minced • 1/2 onion, diced • 8 cups chicken broth • 1 cup brown rice, uncooked • 3 stalks celery, sliced • 3 carrots, sliced • 1/2 head cabbage, thinly sliced • 2 cups frozen green beans • 1 cup water • 2 fresh jalapeños • 1/2 tbsp black pepper • Salt Directions Combine water, chicken meat, garlic, onion, chicken broth and brown rice and cook until rice is soft. Then, add in the celery, carrots, cabbage and green beans. Continue to cook until all the vegetables begin to soften. While soup is cooking, use a blender to puree one cup of water with the jalapeños. Add the blend to the soup and continue to cook for 10 more minutes. You can add more water, if necessary, to reach desired consistency as the soup will thicken more as the rice plumps and absorbs liquid. Serve by ladling in to bowls, or freeze single cup portions. Feel free to garnish with a dash of salt and pepper to taste, or more cooked shredded chicken. They say that chicken soup can cure sickness, but we know that when paired with the spice of jalapeños and the comfort of some soft rice, this is one hell of an army against all Jack Frost can throw at us.
