Shrimp with Cauliflower Grits For the Cauliflower Grits: 1 head of cauliflower florets 1 Cup chicken stock 1 tsp salt 1 tsp pepper dash cayenne Add all ingredients, including cauliflower into a stock pot or large sauce pan. Bring to a boil and cook for 15 minutes. Drain cauliflower, but reserve the stock for later. Add drained cauliflower back to the pan, with a 1/4 cup of the leftover stock and 1TBSP ghee. Use an electric mixer or immersion blender to combine. Texture should be slightly lumpy, to resemble grits. For the shrimp: In a bowl combine: 3-4 cloves garlic - chopped TBSP Red Chili Flakes Zest of a lemon salt and pepper to taste 1-2 TBSP olive oil Add shrimp (we used 12) Marinate for 1-3 hours
