Spring Vegetable Salad 3/4 lbs red potatoes cut in 8 wedges. 1/2 lbs baby carrots cut in half length . 1bunch of asperigus cut into 2 pieces. 1/4 cup chopped red onion. 3 TBS Red wine vinigor. 2TBS Degon mustar. 2 TBSOlive oil. 1 TBS fresh pasly. 1 TBS of fresh dill . salt and peper to tast. Boil potatoes for 7 minutes than add carrots and asperigus boil 5 minutes more. Drain and rinse in cold water transfer to large bowl. mix dressing ansd pour over veggies and toss . very good if it is warm . Richard
