THE WIFE IS AWAY, THE BOY WILL PLAY Mary Ellen is vacationing in Hawaii with four girlfriends, and I am home alone able to do anything I want from dawn to dawn. Sunday morning I thought would be a good time to make a non-fat, low-sodium, chipotle and cilantro infused bean dip. And why not make it from scratch. I started with two pounds of pinto beans, which I soaked in water for eight hours. The recipe did not mention that the beans expand over time when soaked in water. That is were my problems started with the volume of beans greater than the volume of the pot. I almost burned out the blend trying to puree the beans and many other problems—like a dirty kitchen. All is well, the bean dip is delicious, and that is if you like chipotle and cilantro.
