There is nothing I enjoy more than grilling outside. I have done so in extreme heat as well as extreme cold with ice and snow on the ground. I dont use gas but old school charcoal, specifically lump charcoal as it burns much cleaner. I guess beauty is in the eye of the beer-holder, but I think that the old school method simply makes the food taste better and I believe it is a healthier means of outdoor food preparation. Tonight I fixed Cave Man Steaks, a traditional favorite at the Nelson Abode. You will notice in the third image that the steaks go directly on the coals. You can only do that with lump charcoal. The result is a medium rare steak with a most intense flavor. Its a little more work, but the hearty flavored and tender steak is worth the extra time spent.
