This is a lower glycemic index (GI) and more "nutrient dense" alternative to traditional mashed potato. It is also a good way to get kids to eat their vegetables! :-) Note: cruciferous vegetables like cauliflower (and broccoli, Brussels sprouts, kale, cabbage, and bok choy) are lower in starch (carbohydrates) and far higher in nutrients than potatoes. Other lower starch vegetables that mash well without the glycemic load include kohlrabi and celeriac (Celery Root). The addition of butter adds vital fat-soluble nutrients that facilitate the absorption of minerals and other fat-soluble nutrients (Vitamins A, D, E and K). Cauliflower Mash... Ingredients: 1 head of cauliflower, trimmed and cut into florets 0.9oz (25g) butter, cubed 1 clove of garlic, finely chopped Nutmeg, ground (optional) 1/2 teaspoon of unrefined sea salt 1/4 teaspoon freshly ground black pepper Directions: Put the cauliflower florets into a steamer basket. Cook until tender. Transfer into a colander to let excess liquid drain. Combine the cauliflower, garlic, butter, salt and pepper. You can either mash with a potato masher in a bowl or put through a food processor. Adjust seasoning to taste. Serve sprinkled lightly with nutmeg (optional).
