Tonight at Coltellos I wanted to really showcase our Crispy Pork Belly with duck liver pate, carrots and arugula Stuzzichini. The first wine that came to mind was the 2009 Caymus Vineyards Special Selection Cabernet Sauvignon. This wine is perfect now! You just want to drink some more. Some tartness from blackberry, full ripe blueberry, licorice and smoky cedar flavors full the mouth, dramatically big and memorable, and lasting long into the finish. Pairing this was our CPB (Crispy Pork Belly) was easy... a nice layer fat coating the tongue softens the tannins and really pops the flavor of this wine treat. IF you can find the 09 Caymus Special Selection Cab-Sav, it will run ya about $125 a bottle... but it is SO worth it.
