Toy Archer Peel the outside two layers off one large purple cabbage. Cut the cabbage into quarters, core and shread. Place in a large bowl and add 1 T. Coarse salt and 1T. Caraway seeds. Toss and let set 20 minutes then massage vigorously for 5minutes. Place in sterile pint jars packing to within 1 of the top of the jar. (Space for gas expansion) with the juice that is in your bowl add 3T. Salt and 3 cups of water. Pour into a mixing bowl with a pouring spout. Cut your outside leaves into little caps and cover each jar with one cap. Mix the salt, juice and water until the salt has dissolved. Pour the brine over the cabbage to the top of the cabbage and seal the jars tight. Jar the leftover brine in another jar so you can top off jars that spill over when you burp the jars, Put the jars in a pantry or closet to keep dark and at room temp. Burp the jars every 5 days for 20 days ( four burps) then eat what you like and refrigerate whats left. Will keep for 4 months in the refrigerator, if it lasts that long. I eat and give mine away long before then.
