Vegan Edamame Mint and Basil Dumplings Ingredients/ 1 cup edamame, shelled, cooked, drained 10 mint leaves 10 basil leaves 4 scallions, white and green parts, coarsley chopped 1 garlic clove, minced 1 teaspoon fresh ginger, minced 1 tablespoon tahini 1 tablespoon lemon juice 1 tablespoon olive oil Salt, to taste Directions/ Pulse all ingredients to combine in the bowl of a food processor. Add water if needed until you have reached a paste like consistency. Season to taste with salt. Basic Dumpling Dough Recipe Makes about 1 pound, enough for 32 medium or 24 large dumplings Ingredients/ 2 cups unbleached all-purpose flour 1 teaspoon salt 1 cup just-boiled water Directions/ Combine flour, salt and water and wrap in saran wrap or place in a ziplock bag for at least 10 minutes. Bag will get steamy. Roll out and use a large round cookie cutter to make dumpling rounds. Fill each round with 2 teaspoons filling and refer to youtube on the various ways to fold up a dumpling. Steam for 8 minutes in a dumpling steamer over just boiling water or store in the freezer up to 4 months and steam right out of the freezer for 9 minutes.
