We had Simply Recipes Parmesan Chicken for dinner last night served over some mushroom rice with a green salad on the side. It was really good for a quick dinner. I didnt bother to cut the chicken breasts into pieces, just pounded a couple breast halves to even thickness. They still only took about 15 minutes to cook. I didnt bother with the fresh garlic in the butter (I was cooking from a memory of reading this recipe long ago). I did add some garlic salt to the parmesan/crumb mixture though. For the rice, I sautéed some onions and chopped mushrooms in some butter for a while, added a cup of Basmati rice and toasted it in the butter for a few minutes, added a cup and half of chicken broth and a big pinch of salt, brought it to a simmer, covered the pot, and cooked over very low heat for 20 minutes.
