Weekend Weber Recipe Baked eggs with cannellini beans, chorizo and feta. This is a great weekend breakfast idea - but we often have it for dinner on a Sunday night. This is the first time Ive done it on the Weber though! I used the new Weber non-stick frypan with detachable handle - and it worked a treat! Heat your barbecue and place the frypan directly onto the grills. Firstly, fry one brown onion chopped and one chorizo sausage chopped in a tabs of olive oil until softened. Add 4 cloves of chopped garlic, a tabs of chopped oregano (or a tsp of dried oregano) and a bay leaf and cook for 5 mins, stirring occasionally. Stir in 2 cans of cannellini beans, drained and rinsed, 1/3 cup red wine vinegar, 4 tbs tomato paste, 2 -3 tabs water and 1 can crushed tomatoes. Simmer for about 15 mins. To bake the eggs in the beans remove the frypan from the grills and place a trivet on the grills and then the frypan onto the trivet. This will ensure that it doesnt burn! Using the back of a large spoon create 4 - 6 holes in the mixture. Crack eggs into the holes, crumble some feta over the top and drizzle with olive oil. Put the lid down and cook for about 15 mins. If using a family Q - ensure the centre burner is off. Serve with crusty bread!
