Well, Bob Slanz and Sergio, I bought some peppers from the farmers market today for the capsumel Im splitting. Started with 4 gallons, splitting into 4 1 gallon batches for secondary. One with ghost (no seeds because small batch), one with habanero, and one with mild wax peppers (probably slice more than one because they are so mild). The fourth will be a blending control in case I over do it. Will backsweetening to taste after secondary. Tips on time in secondary and how to prep/clean the peppers? Thanks dudes.
