The Glycemic Index is a measure of how quickly blood sugar levels rise after eating a particular food. A nice, stable blood sugar level, avoiding any peaks and troughs, is usually recommended for the average person trying to lose weight and maintain a healthy lifestyle. For example baked potatoes have a much higher GI than boiled potatoes, and pasta cooked for 15 minutes has a higher GI than the same pasta cooked for 10 minutes
