Whole wheat ginger flavored nankhatai Whole wheat ginger flavored nankhatai 1 cup whole wheat flour 1/2 cup powdered sugar.( my family like sweet so added a bit more) 1/4 tsp baking soda 1/2 cup (1 stick) butter (if you use salted adjust the salt you add) salt to taste 1/4 tsp cardamon powder 1/2 tsp ginger powder 1 tbsp semolina (rava) Preheat oven at 325 degrees Beat sugar and butter till it gets creamy. Add spices ie cardamon ,ginger powder. Add salt and beat again. Now add baking soda and beat once . Little by little add flour and mix ( I used the hand blender here too) . The mixture becomes crumbly . Take it in a bowl and lightly mix .Do not overdo. Make small rolls and place on baking tray. A inch apart . Bake for 15 min . Keep a watch on it once the outer surface gets the cracks it will be done soon. If you keep long the base might burn Tip : grease the baking tray and sprinkle some flour over it and dust the remaining .
