Women of a certain age begin to lose bone density and sufficient amounts of calcium and protein becomes a daily concern. If you are a Vegan getting proper calcium absorption can require utilizing a variety of foods that are non-dairy. So, to my Vegan friends concerned with bone health here is one of three recipes designed for bone health using one of the best sources of calcium - oranges! 1. Orange-Carrot Soup -Peel and roughly chop about 6 carrots and boil for about 10 minutes and drain. -Juice 2 oranges, grate 2 cloves of garlic, 2 tsp fresh ginger and 1 tsp of turmeric (or dried tumeric) - Coat pot in olive oil and heat on medium heat adding 1 tbsp cumin and garlic, tumeric and ginger. Cook for about 2 minutes. -Add carrots and juice then add water or vegetable broth to cover and boil until carrots are tender. -Pour contents into a blender and blend until smooth. Pour back into pot and heat. -To make creamy add a little rice, almond (almonds are a great source of calcium also) or coconut milk and lemon zest in lieu of sour cream. -Salt and pepper to taste. -Serve hot and sprinkle with chopped cilantro, parsley or chives.
