and Dinner is SERVED!... SWEET AND SOUR CHICKEN SUNSET STYLE! - this goes out to all my Thai Chili Roasted Garlic fan! As the recipe seems long, I have written it out longer for all levels of cooks to participate in this great meal! This meals serves 4 people. Recipe: Ingredients: 2 cups cooked sticky rice Sauce= 6 Tbsp ketchup 3Tbsp Thai Chili Roasted Garlic Sauce 1 tsp fish sauce (optional) 2 tsp plum sauce 1 tsp worcestershire sauce 1 Tbsp rice vinegar 2 Tbsp oil (vegetable or canola) 1 Tbsp sugar pinch of fresh ginger (grated) fresh ground black pepper Chicken= 4 Tbsp oil 2 boneless skinless chicken breasts (cut into bit sized pieces) 4 Tbsp corn starch 4 Tbsp flour 1/2 tsp salt 1/4 tsp fresh ground pepper Veggies= 1 Tbsp oil 1 small/medium onion (chopped) 1-2 red, yellow, or green bell peppers (its up to you which one you prefer) (cut into bite sized pieces no smaller than 3/4-1inch, so they still have some crunch when your done cooking) 2 garlic cloves (minced, or chopped fine) 2 stalks green onion (sliced thin) Toasted sesame seeds to sprinkle on top (optional) Procedure: Pre heat oven to 170F (just to keep food warm) 1.Mix all the sauce ingredients together and save for later. 2. Mix the dry ingredients for the chicken together 3. Put the cut up chicken pieces into the dry flour mixture. Roll it around and dust off the excess flour. 4. Heat a wok or frying pan on medium/high heat and add the 4 Tbsp oil. Wait a few minutes for it to get hot. Add the dusted chicken. Cook this until they are golden brown and crispy. Put the chicken in an oven safe bowl and keep the chicken in the oven to keep warm. 5. Turn heat to medium. Add 1 Tbsp oil to the pan. Add the chopped onion and cook for 5 minutes or until the onions are soft. Add the chopped bell peppers and cook for 2 minutes, just to cook them slightly. 6. Add the garlic and cook for 30 seconds. Add your prepared sauce and cook for 5 minutes. Just enough to heat it and allow the sauce to cook slightly. Just before you serve put your sliced green onions in. THERE YOU GO!
