-12.05.2014 Today is a very special day for me on this coffee journey. At approximately 9am this Friday morning I finished construction of Yemens first African raised drying bed for coffee. Yemen is the only country in the world that only practices the dry or natural processing of coffee beans- that is theyre set out to dry immediately after harvest with the coffee fruit and mucilage (that sticky, honey like layer under the skin) still on the bean- this gives it its sweet, fruity, complex and full body characteristics. One of the biggest problems with the Yemeni coffee is that the beans are dried on the floor or rooftops of houses, because of this the beans are dried to fast, if it rains they sometimes put the beans in humid rooms in the house raising the moisture content and chickens walk (and sometimes poop) on them. With raised drying beds coffee beans are given good airflow and are drying at a slower and much more even rate, greatly improving the quality and taste. There are a few modifications I will be making on the others i am constructing but overall I am very happy with what I built. I have called this working prototype: S/RDB-1 Shadhili Raised Drying Bed- 1 I named this after shaykh Omar Shadhili. He was the Yemeni Muslim scholar from the port city of Mocha in Yemen. He is credited with the first written work on coffee and was know as the Monk of Mocha.
