A few tips/highlights for the season........... 1. I have always received rave reviews on our roasted turkey.......If you are having a larger group for the holidays and making turkey here are a few of my personal tips/hints........have a small turkey for table presentation, but if you wish to have a turkey dish that will impress your guests...here goes... a. pre-carve the turkey and layer in a dish with gravy.......not only will the flavour be enhanced but it will be super moist.......last minute additions of your favourite herbs(thyme, green onion, roasted peppers again your favourite will work best)will make an aromatic difference..... b. if you have a smoker, or want to add another burst of flavour Sear the turkey on the BBQ then finish in the oven...once you layer with gravy keep warm in the oven till it is time to enjoy!....... 2. Looking for ideas for your stuffing....again getting rave reviews with our stuffing. Our original is made stove stop with yukon gold.....this is well loved....for this year I wanted something different so it is roasted sweet potato, other roasted root vegetables(mainly carrots) a hint of fresh ginger becomes the base of our Signature Stuffing for this season........I also added some corn chips for texture and another dimension in flavour....... 3. I made a festive chilled apple cider, I added the juice from steeped pineapple skin and a hint of ginger only for flavour( not too mcuh to the point of burning....) again great reviews.........
