Curry chicken Ingredients Chicken quarters 1-2 cans of garbanzo beans( chick peas) 1-2 onions 1 tablespoon of minced garlic Vegetable or olive oil 1 bag of chef spicy duck/goat curry powder 1 bag of India curry powder Black pepper Garlic powder Onion powder Sea salt I packet of Sazon 1/2 cup of low sodium chicken broth or enough to keep chicken from sticking to the bottom of the pot. Use quarter legs of chicken as many as you need to feed your family. I use 4-5 quarter legs I take all the skin, fat, and guts out of the thigh part. Soak chicken in vinegar and cool water to kill bacteria for 15 minutes. Rinse chicken cut into chunks. Drain chick peas and add to bowl with chicken. Next season your chicken and peas with onion, and garlic powder, black pepper, Sazon and sea salt to taste. Mix both bags of curry powder together and store in a plastic container or Baggie. Then take as much curry powder as you need depending on the amount of chicken chunks and chick peas you have and rub all over all the chicken chunks and peas. Let mixture sit for a few minutes. Cut up onions.Take cooking oil or olive oil and pour just enough to lightly coat the bottom of the pot. Dump in enough curry powder to cover the bottom of the pot as well. Cook curry powder until it begins to brown. Add onions, garlic, chick peas, and chicken add chicken broth and bring to a boil. Stir to make sure everything is completely covered with the gravy. Cover And Cook until chicken is tender and enjoy.
