Definition of a great partner - someone who takes great care of you when you are sick and is ready to fix something that sounds really, really good (and that youve been missing since moving from Seattle). My dear made a gorgeous pho this afternoon. He started by roasting the onions and garlic for 90 minutes to add depth and umami. He hand washed all the basil, mint and cilantro for the top. He added the right amount of bean sprouts, with a side plate of more (because he knows I love them so much). He pan fried tofu to a nice crisp and added caramelized mushrooms. It was the absolute best pot of pho Ive had. A great meal to delight in, while we watch the ice begin to cover everything with this major storm we are having. Bring it on!
