From Dean Wong Head Chef Degustation menu: Hi foodies. We have finalized the menu, It will start this Wednesday night. You may have noticed the cut and paste from a venison dish i did for the chef of the year a few years ago. The 1st menus description was wrong but the heading was correct. the Venison is an awesome dish but it will wait for our future Dego. menus to be a feature. The correct dish (which has been altered on this menu) will in fact be the roasted beef eye fillet. On the a la Carte side of things: Our seafood and game is selling faster than i thought It would, always good when something goes to plan, well actually the uptake has been much bigger and faster better than we had anticipated or even expected. in the last 3 weeks since the change we have sold over 8 kg of Hare and 5kg of duck, 20 kg of fresh fish and 15 dozen Oronga bay oysters. Not to mention kgs of prawns and scallops. We are having Oronga Bay oysters delivered from Russel live and shucking them to order so they will be alive when you get them. It you have only ever tried pre shucked oysters you have to try these ones live. Degustation Menu $85.00 p.p. SHALLOW FRIED OYSTERS Fresh Oysters Flash fried served with lemon hollandaise.
