Hey MFers Coach Merlinda here! Sunday here in Hampton Roads was absolutely GORGEOUS! Warm weather in the 70s! In January! Alas, today begins the true winter weather...it is cold once again. BUT, on the bright side here is an easy soup/stew that you can indulge in for lunch/snack or dinner! Lentil Soup/Stew In a Dutch oven or medium pot saute 1 chopped onion (white, yellow, whatever you got) and 1 chopped bell pepper (I use red cause it is colorful) in about 2 tbsp. olive oil until they start to get a little light brown. Stir in 1/4 tsp of ground cumin, some red pepper flakes (optional) to your taste 1/4 tsp is good for most and cook a little bit more till you start smelling those spices! Add 4 cups of water, 1 Cup dried red lentils (you will need to rinse your lentils before you put them I the pot and pick out any stones or hard pieces) and 1/4 Cup of brown or other whole grain rice that you like. Bring this all to a boil. Turn heat down to low, cover the pot and cook for about 20 minutes (stir as needed). Add some salt to taste and cook for an additional 30 minutes or so. Enjoy! **This is one of those soups that gets yummier and thicker each time you reheat it** This will make about 4 good size servings. Perfect for my vegetarian and vegan friends as well with a power punch of protein!
