Homemade Pop Tarts Pastry: 2 cups of all purpose flour 1 tablespoon of sugar 1 teaspoon of salt 1 cup (2 sticks) of softened unsalted butter 1 large egg 2 tablespoons of milk 1 large egg used for sealing the pastries. Whisk together you flour, sugar and salt. Mix in your butter using your hands or food processor. (It should look like flour covered pea sized butter clumps when done.) Whisk together one egg and milk, then add to the dough and mix. {I use A LOT of flour on my surface and rolling pin for the next step!} Knead your dough into a large ball. Divide the ball into two parts. Using a cake pan as a guide (because it is easier) roll out each ball into 9x13 rectangles. You want your dough to be about 1/8 inch thick. Cut each rectangle into 9 poptart sized pieces. After this step, you should have 18 small rectangles of dough. Brush your remaining egg onto the tops of the dough. Add your desired filling and then top with another dough piece. REMEMBER TO PUT THE EGG COATED SIDE TOWARD THE INSIDE. This helps it to glue together. Press the edges together and bake on a greased cookie sheet or on parchment paper at 350* for apx. 20 minutes. Let them cool. This only makes NINE tarts so just go ahead and double/triple the recipe! Fillings: You can fill with anything. Just leave room around the edges to close the tarts. It is easy to overfill them. Chocolate Chips: 1 tablespoon per tart Jam: 1 tablespoon per tart Nutella: 1 tablespoon per tart Brown Sugar and Cinnamon: 1/8 cup of sugar and a good shake of cinnamon per tart. Poke holes on the top before baking. You want the steam to escape and not bloat your tart! Icing: Mix milk into powdered sugar. Top your tarts and let harden. I flavor my icings... (ie: lemon on blueberry tarts, coffee on brown sugar....)
