I LOOOVE playing around with flavors in the kitchen. I hit a home-run tonight as I concocted a tart marinade for shrimp-stuffed chicken thighs tomorrow night. SEANS UBER TART MARINADE FOR CHICKEN OR FISH 1 cup olive/avocado oil 1/4 cup grated parmesan 2 tablespoons dijon mustard 1 tsp black pepper 1 tsp Himalayan salt (to taste — Im trying to cut it back a bit. I also prefer to fresh grind and keep the salt kind of biggish, so it plays with the other kiddies and can give an occasional explosion of sodium that I love so much, rather just an even-toned dispersion of saltiness) 1 1/2 teaspoons lemon juice (when I created this I used a tablespoon of lemon juice and found it ALMOST too tart; truth be told, I kind of like it that way, so feel free to play) 1 tsp Tabasco 1 tablespoon cilantro (finely chopped) 1 1/2 tablespoons of garlic (finely chopped or pureed) I have this marinade maturing in the fridge right now. It will taste divine on my shrimp-stuffed chicken thighs tomorrow. YUM!
