Island style pork chop with a pineapple and cucumber salsa Ingredients: 6 Pork chops (Bone in) 2 Tablespoon brown sugar Zest of 2 medium lemons 1 Tablespoon dried thyme 1 Garlic clove minced 1 Tablespoon Extra V olive oil Salt to taste Rub mixture all over the chops and let it rest at room temp for an hour or even better covered overnight in the fridge. bring up to room temp before cooking over medium heat for about 6 min per side. For the Salsa you need: 1 x 400 gram tin of pineapple bits ( Drained well) 1 Medium cucumber peeled, seeded and chopped like pineapple 2 tablespoons fresh mint chopped 1 tablespoon brown sugar chopped chilli flakes to taste +- 1/2 chilli 1 tablespoon fresh grated ginger 1 tablespoon fresh lemon or lime juice. Mix all together and let it stand in a sealed container in the fridge for a few hours. I prefer to warm it up in a small pan on the stove just before serving. Serve with Rice and green beans topped with a pinch of ground coriander and a small sprinkle of coconut. A nice ice cold Rosé or a Merlot/Cabernet Sauvignon at room temp goes well with this meal.
