Meats2U Steak, Snap Pea & Pasta Salad (with Germolata Dressing) Adapted from recipe as seen in The Healthy Beef Cookbook, published by Houghton Mifflin Harcourt INGREDIENTS (*Salad Dressing Ingredients) 1 lb. Meats2U Flat Iron or Bistro Filet 2 C. fresh sugar-snap peas 1 C. shredded red cabbage 2 C. gemelli or corkscrew pasta, cooked 1 C. grape or teardrop tomatoes, halved 3 cloves plus *2 cloves fresh garlic, minced 3 slices Bermuda onion, cut into halves 1 tsp. plus *1/4 tsp. fresh ground pepper 1 tsp. plus *2 tsp. lemon zest 1 tbs. plus *3 tbs. chopped parsley *1/3 C. fresh lemon juice *3 tbs. extra virgin olive oil *½ tsp. salt 1. Gremolata Dressing: Combine all asterisked ingredients and whisk together. 2. Cook snap peas for 2-3 minutes in boiling water. Rinse in cold water & drain. Combine with pasta and tomatoes. Toss with 2 Tbs. of the Gremolata dressing. Set aside. 3. Combine 3 cloves minced garlic and 1 tsp. pepper and press evenly into both sides of steak filets. 4. Broil 2 – 3 inches from heat, turning once, until just medium rare. Timing will depend on thickness of filet (4-10 minutes total), but meat should still be “pliable” if not overdone. Let rest at least 5 minutes. 5. Cut filets into thin slices, seasoning with salt as desired. Add steak and remaining dressing to pasta mixture and toss together. Garnish with lemon zest and parsley.
