My Chicken Noodle Soup 1 whole chicken or enough pieces to make 2-1/2 cups. Place in large stock pot cover with water add 2 t salt. Bone in chicken fat and all! Will give you a richer stock. If you only like dark meat use leg and thigh quarters. Cook on almost a boil for about an hour. Cool. When cooled enough to handle remove fat and bones. Cut or tear chicken into bite sized pieces. It will fall apart. You should have about 6 cups of stock. If it boils down add a little more water to the pot. While chicken is simmering prepare veggies! 1/2 cup diced carrots (mini carrots have a milder flavor) 1/2 cup diced celery 1/2 cup diced onion 2 t chopped garlic 1 8-oz can mushrooms if you like them! 1 t celery salt 1 package wide egg noodles Add veggies, celery salt and pepper to taste into stock. Simmer about 30 minutes until carrots are done. Add noodles. Cook to desired taste. Add chicken. Thats it! Awesome Cold rainy day dinner!
