Smoked Haddock Smokies: These are quick and easy to prepare and cook! If possible use naturally smoked haddock, and you can substitute haddock for smoked cod or coley. ....Serves 4 500g Smoked Haddock, skin removed and cut into cubes 1 Punnet Cherry Tomatoes, halved 3 Spring Onions, sliced 100ml Crème Fraiche 100ml Fresh Cream 100g Grated Mature Cheddar 1 tbsp Olive Oil Seasoning Heat a large frying pan over a medium heat and drizzle with some olive oil. Add the haddock cubes and cook for approximately 2 – 3 minutes, then add the tomatoes, spring onions, crème fraiche and cream to the pan, cook for a further 5 or so minutes. Season to taste. Remove the pan from the heat and divide the mixture between 4 ramekins. Sprinkle with some cheddar cheese and place under the grill for approximately 3 minutes until the cheese is bubbling and slightly golden. Serve immediately with some nice crusty bread to mop the delicious sauce.
