Tonight I made lasagna for dinner. I roasted 2 thinly sliced eggplants, and used them in place of pasta sheets. The sauce contained lots of roughly puréed veggies, broth and grass fed beef mince with sliced mushrooms. I used goats milk chèvre and an organic goats milk hard cheese (similar taste to pecorino cheese) in between each layer and on top. The dinner was a big hit with the entire family and we have enough leftovers for tomorrows lunch!
