Well the photograph isnt perfect (I used my phone camera), but the meal was about as perfect as it gets. Caribbean chicken curry (with mango and green pepper) together with rice and peas. Absolutely delicioso and a gorgeous balance of hot red chilli, lasting heat of ginger and the sweet/tart of the coconut/fresh mango combo. The curry was perfect with the rice and peas which were cooked in a combination of chicken stock and coconut milk, with onion and herbs to increase the flavour layers. Absolutely fab - and well be doing this one again!
