Foods can contain two other substances that make cholesterol levels go up: saturated fat (found mostly in foods that come from animals), and trans fat (partially hydrogenated oils found in many processed foods and baked goods). Trans fat is produced when vegetable oil is hardened by hydrogenating it. Trans fat and saturated fat both raise your LDL (bad) cholesterol.
