Ukrainian Fish Soup - Ukha About 3 1/2 lbs of various fresh water fish (e.g. carp, catfish, pike, perch…) 1 fish head (pick the nicest looking one) 1 red bell pepper (chopped) 1 tomato (chopped) 1-2 carrot (cubed) 2 medium onions (chopped) 2-3 potatoes (cubed) Fresh parsley (chopped) 1 tbsp smoked paprika Salt and pepper (to taste) Water 2 lemon, juiced Hot pepper (crushed) optional Scale, de-bone and clean fish. Bring a large pot of water to boil over high heat. Add all ingredients (except fish) and simmer on medium heat. Add fish. Continue to simmer for 10-15 additional minutes. At the end, add lemon juice and check for seasoning. Serve with a good white or light rye bread. 2 notes: 1.The more variety of fish you use, the more aromatic and flavorful the soup is. 2.Traditionally, for whoever gets the fish head in their bowl, consider it a high honor. That’s the way the Ukes explained it to me.
