How many of us have overbought at the market?! Here is what Jim West, former Webb Citian, did today - As I sometimes do when confronted with the wealth of lovely fresh produce available at the farmers market I over bought. Much of what I bought went into the preparation of our Mothers day feast. But when I looked in the fridge this morning I was confronted with way more produce than we were going to eat this week, especially since we have no more family or friends visits scheduled. I had red, green, yellow, and orange bell peppers. I had fresh asparagus, tomatoes, onions, mushrooms and celery. I looked for what else was on hand and found spaghetti sauce, italian sausage, pepperoni and parmesan and mozzarella cheese from last weeks family pizza night, I had a pound of macaroni in the pantry. I boiled the macaroni, and used half for pasta salad with some of the peppers onions, and the mozzarella cheese and pepperoni. And divided that some for us, some for the kids, and some for our friends that we share back and forth with. Then I browned and crumbled the sausage, added onion, peppers, mushrooms, the tomatoes, the chopped fresh asparagus, and spaghetti sauce and put it in a pan, covered it with parmesan then foil and popped my pasta primavera in the freezer to resurrect the next time we need a quick family or company meal. Finally I chopped the rest of the rainbow peppers and put them in a bag and tossed them in the freezer and did the same for the celery. Nothing wasted, nothing new spent, and all the things in the fridge that needed to be dealt with have been. YEA!
