I was so skeptical about this salad but my enthusiastic food lover convinced me to give it a try. no wonder he disappears in central market buying speciality food. The salad was just out of the world. 4 cups cauliflower florets 1/2 cup very thinly diced red onion 1/3 cup chopped mint leaves 1/3 cup golden raisin 1/4 cup capers 3 tbsp. olive oil 3 tbsp. sweet white wine vinegar 1/4 cup striped piquillo peppers 1/4 cup romano cheese 1/4 cup slivered roasted almonds salt and pepper to taste Coat cauliflower with olive oil, salt and pepper. Roast in 450 degrees for 15 minutes and then broil for another 6 minutes on bottom shelf of oven. Let it cool. soak raisins in wine vinegar for 30 minutes. soak capers in cold water for 30 minute. Remove capers and throw water away. Remove raisin but keep vinegar. Add onion, mint,capers, peppers, almond, into cauliflower. set in serving bowl. sprinkle cheese on top and just before serving add preserved vinegar. mix and serve at room temperature.
