In Yesterdays News: Local Food blogger focuses on gluten and dairy free recipes Eryn Dion News Staff Writer #PHILLIPSTON - For anyone trying to cope with a food allergy or intolerance, finding meals that are both nutritious and appealing can be a drag both on your patience and your wallet — until now. Fitchburg State University senior and town resident Casey Leger has cultivated a one-stop recipe and lifestyle haven for anyone with unique nutritional requirements through her online blog, “Casey’s Wholesome Kitchen” features dozens of gluten and dairy-free options. Started over a year ago when she returned from London after a semester abroad, Ms. Leger, who was diagnosed with Celiac Disease in 2005, began building recipes and cooking meals that would support her healthy lifestyle while managing her symptoms. “While I was (in London) I had a lot of trouble finding gluten-free food,” she said. “When I came back I just really wanted to start making my own food and stuff that would help me feel better.” Ms. Leger originally posted her meals to Instagram, where she amassed a group of almost 73,000 followers. Her followers soon began requesting recipes and “Casey’s Wholesome Kitchen” was born. “I just never thought I would get that recognition,” Ms. Leger commented. One of Ms. Leger’s main missions in crafting content for her blog is dispelling the myth that gluten-free foods are bland and distasteful. “People get so upset when they get diagnosed and they don’t realize there’s so many options now,” she said. “It doesn’t have to be boring. You can make nutritious and delicious food.” In addition to Celiac Disease, Ms. Leger has a number of food allergies and intolerances. She regularly avoids dairy, hazlenuts and almonds. In addition, while her recipes are gluten and dairy-free, most also come with a vegan option. “There’s so many alternatives that people just don’t know,” Ms. Leger said. An Exercise and Sports Science major at Fitchburg State, Ms. Leger said the blog is just one aspect of her healthy lifestyle and while she does not currently incorporate her studies into her blog, she does plan on continuing to post and publish for as long as interest is out there. “If people want my recipes, I’m going to keep posting them,” Ms. Leger stated. The 21-year old blogger said her family is very supportive of her online ventures, letting her takeover the kitchen whenever inspiration strikes. “They think it’s great,” she said. While gluten-free and whole foods can be expensive, Ms. Leger has found ways to make the diet work on a college student’s budget and she will often purchase foods that are hard to come by on Amazon to try and cut down the price. “It’s a lot cheaper,” said Ms. Leger. “That’s usually where I get my specialty foods.” Ms. Leger’s blog can be found at caseys-wholesome-kitchen/ and her Instagram page can be viewed at instagram/wholeandhealthy/.
