Prawn Curry Ing: 1 kg Prawns shelled and deveined Shallots-25 chopped roughly Tomatos-5 medium sized chopped fine Ginger 1 Garlic 12 cloves 4 green chillies 1 bunch Coriander blended to a paste Mustard-1 tspn Turmeric powder-1/2 tspn Curry leaves 30 Oil Salt --------- Dry roast the following separately,cool,and grind to a powder Fennel seeds 1-1/2 tbspn Cumin seeds-1 tspn Rice-2 tbspn Coriander Seeds-2 tbspns Curry leaves -10 Red chillies-15 Half a coconut,scraped and dry roasted to a mild brown color ------------------- Method: Heat oil in a Pan,splutter the mustard seeds,add shallots and curry leaves.Once Shallots go translucent,add the ginger,garlic,chilli,Coriander paste,sautee till raw smell goes.Tip in the Tomatos and cook till they go mushy.Add Salt,turmeric,ground masala,stir well.Add 200 ml of water and bring it to a boil.Let it boil till u see flecks of oil by the sides.Pop in the prawns now and stir well.Turn off flame after 3 mts.Residual heat will ensure prawns get cooked perfect.
